Case in point - meet Phil Thibodeau, who is busy in the kitchen doing what he loves best, cooking. "We tell our guest, go to bed when you're tired, get up when you're rested, leave when ready and eat when you're hungry. And if you sleepwalk you're going to get your feet wet. That’s how close we are to the water."

Thibodeau and his wife, Barbara, are owners and operators of the four-star Gîte Toutes Saisons Bed and Breakfast in Pointe-Verte. Before Mr. Thibodeau’s famous seafood omelet hits the skillet he moves a café table to the shoreline where his guest will indulge in their delicious breakfast made with farm-fresh eggs and tender morsels of Chaleur Bay scallops and shrimps. Toasted slices of Thibodeau’s yummy homemade bread is served alongside. . . "We use local products and only the freshest, most natural foods available," he says. "Our guests can dine wherever and whenever they like!”

New Brunswick attracts birders from around the world. Many Bed & Breakfasts are tucked into quiet little places perfect for spotting birds and other wildlife. "We had a couple from Georgia who made a special trip to go birding with an international birder who lives in our community," says Mrs. Thibodeau. "They said they'd traveled all over the world and their best birding day was the discovery of six new species. Here, they found eleven."

Barbara Thibodeau says, "We focus on relaxation and connecting with the authenticity of the local area." The guest-room décor inside this eastern, white-cedar log cabin Bed & Breakfast compliments each of the four seasons. "Much of our furniture was built locally," she says. In New Brunswick every season is an adventure.

"I wish I had ‘before’ and ‘after’ pictures of some of the couples who have come here," says Mrs. Thibodeau. “When they leave their skin is brighter and their eyes are twinkling."

R&R is served up, New Brunswick style, at bed and breakfasts throughout the province. Catching a snooze and enjoying long-overdo reading in cosy nooks near a wood-burning fireplace might be hard to leave, but hey! There's always next time.
